Marvin’s Labor Day Quesadilla Appetizers on the BBQ 2012

  • 4 (10 inch) flour tortillas
  • 1 cup or more shredded Cheddar cheese
  • Salsa

Fillings-Your Choice:

  • 1/4 cup chopped sweet onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh chives
  • 1/4 cup sliced black olives
  • 1/4 cup sour cream


  1. Preheat an outdoor grill for medium heat.
  2. Lightly oil the grill grate.
  3. Spread 1 tablespoon of salsa on half of each tortilla.
  4. Sprinkle each with cheese.
  5. Distribute topping of your choice: the onion, green bell pepper, red bell pepper, tomato, cilantro, chives, and olives evenly among the tortillas.
  6. Fold tortillas in half to cover the filling.
  7. Place the filled tortillas directly on the grill. Cook about 1 ½-2 minutes per side, until cheese is melted and the tortilla has grill marks.
  8. Cut into thirds. Serve with remaining salsa and sour cream.

You have to cook fast because the crowd will grab them.
